Led by Chef Jason Custer, Mono Inn offers a refined tasting menu guided by seasonality,

thoughtful sourcing, and a connection to the landscapes of the American West. 

With over a century of fine dining history, the Inn continues to evolve 

while honoring its legacy as one of California’s most distinctive dining destinations. 

From the first point of contact to the final moments of service, each element is intentional, executed with precision, consistency, and care. Each role requires contribution and shared responsibility to the entire team and to the guest experience as a whole; whether supporting the flow of service,
